Linguine with Tomatoes, Tassos Garlic Stuffed Olives & Feta
Thursday, July 28th, 2011When you get home from work and you want something quick and healthy, believe me, this dish is for you! Quick and easy, this delicious dish is one that can be whipped together to serve as many as four people.
Ingredients
- 3 1/2 cups chopped tomatoes on the vine (approximately 7)
- 1/2 cup dry white wine
- 1/2 cup Tassos® Extra Virgin Olive Oil
- 2/3 cup Tassos® Garlic Stuffed Green Olives, chopped
- 1/2 cup coarsely chopped fresh Italian parsley
- 1/2 cup coarsely chopped fresh basil
- 1 tablespoon balsamic vinegar
- 1 1/2 cups crumbled feta cheese
- 3/4 pound linguine
Directions
Purée 2 1/2 cups tomatoes, wine, and 1/3 cup Tassos® Garlic Stuffed Green Olives in blender. Heat Tassos® Extra Virgin Olive Oil in large skillet over medium-high heat. Add tomato puree and remaining Tassos® Garlic Stuffed Green Olives. Cook until sauce begins to thicken, stirring often, about 5-8 minutes.
Cook pasta in large pot of boiling salted water until al dente, stir occasionally. Drain and keep 1/2 cup pasta cooking water.
Add pasta, parsley, basil, and vinegar to sauce in skillet. Toss over medium-high heat until the sauce coats pasta – add reserved cooking water 1/4 cup at a time if dry. Cook approximately 3 minutes. Season to taste with salt and pepper. Mix remaining 1 cup tomatoes and 3/4 cup feta cheese. Place the pasta in a bowl and sprinkle with remaining cheese.
