
Introduction to Greek Cuisine
Hippocrates, the ancient Greek well known for being the Father of Medicine, was among the first to recognize cooking as an instrument of dietetics. Greek cuisine has always been based on the Hippocratic recipe of achieving a harmonic combination of opposing flavors. "The greater the diversity and number of variations, the greater the pleasure" wrote Hippocrates in his treatise On Diet.
The cornerstone of Greek cuisine consists of olive oil, wine, cereal, fresh vegetables, fish, lean meat and cheese. With olive oil and tomatoes being the ruling elements, it is a light, tasty and healthy cuisine.
One wonders why simple things in every day life, like eating and drinking take on vivid dimensions in Greece. Greek cuisine is more then just gyros, mousaka and baklava. It is a well-seasoned flavorful meal that begins in the garden, heads to the kitchen where it is passionately prepared, and ultimately finds its way to an eloquent display on the serving dish. Through roasting and baking a whole array of flavors are created, each one bringing delight to the palate and heart. This traditional style of cooking, delicious as it is, bears little resemblance to what many Americans have come to know as Greek food.
Greeks regard eating as a social and cultural experience, as a romantic and seductive way of life. Greek cuisine is not only enjoyable but also quite healthy. Utilizing olive oil in almost every dish, research has shown the Greek diet can lower the risk of heart disease and deter other illness. The monounsaturated fats found in olive oil have been linked to a reduction in LDL cholesterol. By tradition, Greek cooking is championed by nutritionists everywhere and is the quintessence of Mediterranean cuisine.
