Roasted Tassos Olives

 

 

There is nothing better than a dish that is easy to make, has an unbelievable taste, is healthy and wait for it … even has a touch of elegance. Roasting changes the taste and texture of the olives, making them tender, almost melting and brings out more of their fruity taste.

Whether to serve at an outside gathering or a casual dinner, Roasted Tassos Olives are so easygoing, delicious and nutritious that they may forever replace chips and dips or cheese and crackers.

Olives fit into most everyone’s diet too!

 

Ingredients

  • 3 cups of a mix variety of olives, stuffed, unpitted (approximately a ½ cup per person)
  • 1 cup of cubed Feta Cheese if not using a cheese stuffed olive
  • 3 Tbsp of Tassos® Extra Virgin Olive Oil
  • 2 Tbsp of red wine vinegar
  • Juice of 1 lemon
  • 6 fresh thyme springs or 1 tsp of dried thyme
  • Optional herbs to try are cumin, fennel or minced garlic
  • Salt and fresh cracked pepper to taste
  • Loaf of fresh, crusty bread

Directions

Preheat oven to 400°F. 

Toss olives with all the ingredients. Taste the dressing and adjust to your liking. Spread olives out into a casserole dish. Bake for about 20 minutes until bubbling. Remove roasted thyme sprigs with fresh thyme and serve with crusty, hot bread.

Serve

Serve warm with spoons or toothpicks and fingers works too. A good bread for dipping up the sauce is highly recommended.
