Mozzarella Garlic Bread with Bruschetta



This is a crowd-pleasing appetizer or a home alone “it’s all mine” Mediterranean influenced garlic bread.

There is nothing better than the affinity Mozzarella has with garlic until you add these additional toppings that have zero sugars, very low carbs and calories: supremely tasty Kalamata Bruschetta, Sundried Tomatoes and American Heart Association® certified Tassos® Extra Virgin Olive Oil.

This garlic bread is now so much greater than the sums of its parts and healthy too. Select gluten-free French bread to make this a gluten-free recipe.



  • Large loaf French bread
  • 2 Tbsp Tassos® Extra Virgin Olive Oil, plus extra for drizzling
  • 3 cloves garlic, minced
  • 2 large low-moisture mozzarella balls, approx. 8 oz each, sliced ¼ inch thick
  • 4 Tbsp Tassos® Kalamata Bruschetta
  • 3 Tassos® Sundried Tomatoes, sliced (optional)
  • 2 Tbsp shaved Romano cheese (optional)
  • 2 leaves fresh basil, thinly sliced (optional)
  • 4 figs, sliced, or 4 oz Tassos® Fig Marmalade (optional)

Cooking Directions


Preheat oven on broil setting.

Slice French bread open lengthwise and brush inside with extra virgin olive oil. Top with minced garlic and slices of mozzarella. Place on top of a lightly oiled sheet of aluminum foil. Bake until cheese melts.

Drizzle extra virgin olive oil on a serving plate. Liberally spoon Kalamata bruschetta across the serving plate on top of the olive oil.

Slice bread in 1-inch rounds and transfer to plate.


Garnish with sundried tomatoes, Romano cheese, basil leaves, and figs (optional).

Sandwich variation: Rather than slicing before plating, add bruschetta, olive oil, and garnishes directly to bread and enjoy as a sandwich.
