Stuffed Fire Roasted Florinas Peppers



The Mediterranean grows the exceptional Florina Pepper that is remarkable for its sweet taste and wide shouldered, elongated shape and large hollow body. They are made for stuffing.

With traditional Mediterranean herbs and garnish, this is a delightful, low calorie, all vegetarian, gluten free dish. Florinas peppers are legendary for their taste, texture and culinary versatility and only ours are American Heart Association® certified.

In this recipe, we have stuffed them with rice, but you may substitute or add cheeses, meats or seafoods.



• 1 onion, chopped

• 3 garlic cloves, minced

• 2 Tbsp plus ½ c Tassos® Extra Virgin Olive Oil

• 1 tomato, diced • 2 stalks parsley, minced

• ¾ Tbsp salt

• ½ tsp pepper

• 2 c cooked long-grain rice

• 4 Tassos® Fire Roasted Whole Sweet Florinas Peppers

• ½ c water

• Chopped basil or feta cheese for garnish

Cooking Directions


Preheat the oven to 400°F.

Combine onion, garlic, and 2 Tbsp extra virgin olive oil in medium saucepan. Sauté gently over medium heat until soft and translucent. Add tomato, parsley, salt, pepper, and sauté over low heat. Mix in cooked rice.

Gently stuff peppers with rice mixture. Place stuffed peppers in a baking pan greased with olive oil and pour ½ c water and ½ c extra virgin olive oil in the baking pan.

Bake for ½ hour.


Plate and serve warm or cold, garnished with chopped basil and/or feta cheese.
