The Importance of Minimizing Fruit Bruising:

A Commitment to Quality and Sustainability

At The Tassos Company, we take pride in our commitment to hand-harvesting our olives—a practice that holds significant importance for us. Unlike large corporate conglomerates, we embrace this meticulous and thoughtful approach to agriculture.

While hand harvesting may not be the most time-efficient method, it is the only sustainable option that respects the well-being of the trees, the quality of the fruit, and the trust of our customers.

In contrast, the use of heavy, gas-powered machinery in olive groves can have detrimental effects. High-velocity trunk shaking not only contributes to carbon emissions but also causes significant bruising to the olives.

When the skin of any fruit is bruised, a series of biochemical changes is triggered, leading to an accelerated ripening process that ultimately results in spoilage. This chain reaction negatively impacts the fruit’s flavor, nutritional value, and antioxidant content.

By choosing to hand harvest, we ensure that our olives and olive oils offer unparalleled taste and superior nutritional benefits.
