The freshest, healthiest ingredients make all the difference in making a mediocre or a great dish. Two important ingredients are as important in cooking as fresh herbs and superior quality extra virgin olive oils.
Fresh herbs are not always in season and often when they are, they can be bountiful. And no one wants to waste lovely fresh rosemary, oregano, sage, or thyme.
This recipe is ideal to preserve these herbs freshness year-round. Frozen herbs can be used in the same proportion as fresh herbs.
Many dishes call for oil and herbs. These little cubes are ready to sauté and add to stews, soups, meat and vegetable dishes. Mint, basil, dill or other soft herbs don’t do as well with this kind of preserving.
If you don’t have an ice cube tray, most silicone molds, baking and cupcake pans make great substitutes as they come in a variety of shapes and sizes. Even recycled styrofoam egg cartons and yogurt cups work well.
